If you haven't seen "Emma Smith: My Story," it is FANTASTIC! WATCH IT! We hadn't seen it before this weekend. But it is wonderfully done, and revealed things to us that we didn't know before about Emma Smith. We loved it, and it made us cry. She was an amazing woman and I have nothing but respect for her.
Well, we gave freezer meals a shot this week. My overall opinion is that they save you time, but eliminate variety (as most of them are casseroles). They also gave Jon and I heartburn, not sure why but nonetheless our bottle of Tums was used this week. We did find a few that we liked and others we did not care for at all. I've posted the recipes for the Chicken Stuffing Casserole, Tortilla Soup, and Chimichangas on my recipe blog. I've also altered the recipe for the Southwest Egg Rolls - we ate the actual thing this week, and I noticed a few things that needed to be changed. Here's our menu plan for this week:
Sunday - Barbecue Chicken with Freezer Meal (Funeral Potatoes)
Monday - Grilled steaks with asparagus and mashed potatoes
Tuesday - Freezer Meal (Spaghetti)
Wednesday - Cobb Salad
Thursday - Freezer Meal (Broccoli Chicken)
Friday - Omelets
Saturday - Hamburgers with Freezer Meal (Barbecue Beans)
Nothing too fancy, but a little more variety this week. If I like the freezer meals we eat this week, I'll post the recipes next week.

Well I cried during the preview...so it must be good! You are a much better cook than I Cat! I was thinking Arbys sounded good for dinner! :)

Monday- Cold Ceral
Tuesday-Spagetti (a rare treat!)
Wednesday- sanwiches
Thursday- free for all, whatever you can scrounge up!
Friday- tacos?
Sat-Sun..We splurge and eat out on Saturday, and I actually cook on Sunday... LOL.
